Meatless Monday and Weekend Update

Meatless Monday again :)


Tonight I made a mushroom, leek, and linguine frittata for dinner. It's a little strange with the pasta in there, but it adds some bulk and makes me feel full, so whatevs :) This dinner was also courtesy of my giant Cooking Light cookbook. I'm glad I added garlic salt to it because it was a bit on the plain side. In the future, I'll be adding some actual garlic, onions, and other spices to make it a bit more interesting.

Saturday we went to Victoria and Albert's for our friend's 30th birthday. It was AMAZING! Hubs and I looked pretty hot - holla! We've never been to this hotel before and to say it was pretty swanky is an understatement. The food was delicious and the wine pairings were so worth the extra money. The service was impeccable! All in all it was a great dinner with great company. The only downfall was I ended up being pretty tipsy from all of the wine which led to a small hangover on Sunday morning (not fun when you have a 5k to run).

Sunday I did the Color Run. It was a lot of fun and I'm glad I got to do it with friends. The race started at 9am on the dot, but they released people in shifts to start running. By the time they got to us it was 9:30 and disgustingly humid. I was feeling a little rough from all of the wine the night before, but we finished the race without stopping or walking. I have no idea what our time was, but I'm just glad we finished.

I missed my Weight Watchers meeting on Sunday because of the run. I was sad about it at first, but then remembered all of the food and wine consumed the night before and didn't mind so much. Seeing an increase on the scale sucks enough without having to have someone else see it. Hoping it doesn't mess up my Wednesday weigh-in. Planning to workout in some form every day this week in hopes of offsetting any potential gain...we'll see how that goes :)

  1. Danielle, I just visited your blog here. It is very inspiring. Nursing school to boot. You go girl. I wish I would have done nursing back when I wanted to do it but got into the hospitality world instead. You are an inspiration to say the least and seeing what you are doing makes me wish I were a few years younger. I'm not old but in a different phase of life now. I still feel young. Life is short Danielle, live your dream and don't let anyone stop you. Ann Marie
