Tonight is Meatless Monday so for dinner I made quinoa stuffed peppers. They were delicious and didn't take too much effort. I filled the peppers with quinoa, tomatoes, tomato sauce, cucumbers, and onion. Pop it in the oven, put some cheese on top, let it melt, and that sucker is done. Easy to make and really delicious :)
I've decided to start posting my meal plan board each week. It'll keep me more accountable knowing others know what I should be eating and will prevent me from doing many nights of take out or pasta or something not that healthy. Here's our week:
This weekend was my long run after having a week off. It was a little rough for the first half, but as soon as I heard my Nike app tell me I was at the half-way point, my mind just freed up from all of the crappy thoughts that were making my run a struggle. That saying about don't let your head give out before your legs give out (or whatever it is) is really true!!! Mentally, my run was exhausting. Physically, it was no problem. I think I'm really going to rock my half-marathon in only - EEK!!! - 5 weeks!
Nugget went to a birthday party this weekend at a bounce house place. Even though he was a little grump (gotta love those teeth!), he had a really great time. He loves being in the bounce houses and cracks up laughing when you bounce with him. It was a birthday party for one of my nearest and dearest's 2 daughters. They seemed like they had a great party and got a lot of cool presents! We left at the very end of present opening since he was on the verge of a grand mal meltdown and Hubs was walking him around outside. We weren't in the car for more than 5 minutes when he passed out!

Good idea posting your meal plan so you stay accountable! That's what I should do, we ended up at Qdoba tonight since I didn't want to deal with cooking and cleaning up! ;) We're back to low/no carb (no refined ones anyway) at dinner this week. Tired of feeling so sluggish. Only 5 weeks to go, crazy! I was just wondering about that the other day. Keep up the good work! Wish I was there. Miss you! -EEH

DeleteHey, what do you do for stretching and warm-up before running? The stamina doesn't bother me while running, it's just my calves get so tight and crampy.
ReplyDeleteTo be honest, I don't stretch before running. I read somewhere that there's not a lot of benefit to doing it, so I just stopped doing it. I always do a warm up walk first to get my muscles warmed up, but I don't stretch. Make sure you do a good warm up and a good stretch when you're done.
