Holy crap I only have one week left before school starts. The Nugget decided to sleep in today. He normally wakes up at some ungodly time between 5-6am, but today he slept in until 7:30! Queue choirs of angels singing - it was a miracle!
Hubs and I got a night to ourselves on Friday, so we went to Disney :) It was nice to get to ride things we never get to because of Nugget. We also got to stay late and watch the Electrical Parade which is my absolute FAVORITE!
T25 was good last week. The workouts are intense, but quick. I may have wanted to die. Obviously I didn't, but it was hard. I also liked their meal plan. The first week of 1,100 calories was hard, but then it was back up to 1,600 calories. I was pretty hangry, but I survived.
While doing T25 I realized there is zero way I'm going to be able to keep it up in a week from now when school starts and half marathon training begins, so I'm going to have to put it off for a while. I won't be able to start it up again until March next year since I've got my half in November and then another one in February, so it's back-to-back training. Sorry Shaun T...Disney takes precedence over you :)
Last week I mentioned wanting to go back to eating less meat. I stumbled upon some blog posts about Vegan Before 6 and thought this sounded exactly like what I wanted to do. I don't have the book, but thankfully it's pretty self-explanatory: eat vegan before dinner time and at dinner you can eat meat, but do so in moderation. This starts today for me and I'm actually really excited. Breakfast will consist of fruit and oatmeal - probably some overnight oats. Lunches will be a lot of salads or beans and rice. Here's our dinner menu for the week:
Monday: Black bean quesadillas and watermelon - MEATLESS MONDAY! Woo :)
Tuesday: Sloppy joes (grass fed beef) w/ sweet potato fries & green beans
Wednesday: Turkey burgers w/ mango chutney, onion rings, & green beans
Thursday: Crock pot salsa chicken w/ rice & green beans
Friday: Onion ring chicken w/ green beans & fruit
Saturday: Crock pot sesame chicken w/ rice & green beans
Sunday: Left over onion ring chicken
Can you tell I bought a giant bag of green beans? Ha!
